Ingredients:
1 1/2 cups basmati rice (soak for about 30 minutes)a handful green peas
1 carrot (in julienne strips)
1 medium onion (finely chopped)
2 garlic cloves (crushed)
1 medium Tomato (finely chopped)
1 green chili (optional, do no use if you do not like it spicy)
cooking oil
Spices:
a few whole coriander seeds
cumin seeds
2 green cardamom
2 cloves
salt, red chili powder, coriander powder
a dash of turmeric
Recipe:
1) heat 1 1/2 cooking spoons of oil in a pot, add the finely cut onion to it. after a while add the garlic to it brown the onion (the deeper the color the more beautiful the color of the rice). add whole spices (coriander, cumin, cardamom, cloves)2) once the onion are browned, add the chopped tomato to it. try to get the tomato as mashed as possible. add finely chopped green chili.
3) add the green peas and julienned carrots to it. finally add around 2 1/2 cups of water. add remaining spices. bring the water to boil
4) when the water boils add the pre-soaked rice to it. check the salt now, the water should taste slightly too salty
5) bring to boil, put on the lid and cook the rice on medium heat.
6) once the water evaporates, turn the heat to low and let rice steam until cooked.
Serve this rice with some yummy Kababs and Mint-Yogurt Chutney.
